Chef and Owner Tobias Pohl-Weary
At a young age Tobias Pohl-Weary decided he would become a Chef. At 12 years old he had the privilege of assisting Chef Jamie Kennedy at The Palmerston Restaurant on a New Years Eve. This meal showed Chef Tobias that food could be more then sustenance it could be an art form.
At age 16 Tobias began his formal apprenticeship at the King Edward Hotel under Chef John Higgins. At 17 he met Chef Michael Stadtländer and began occasional stages at Eigensinn Farm.
By age 20, Chef Tobias had finished his apprenticeship and began traveling. He honed his skills while working across Canada and overseas.
Chef Tobias has held every position from Dishwasher to Executive Chef in intimate fine dining restaurants such as Red Canoe Bistro, hotels and event catering companies. As Executive Chef Tobias has overseen some of Canada's finest establishments including Sarkis Restaurant (Toronto), mosaic Catering (Ottawa) The Terrace Inn (B.C.), M & O Catering (Toronto), Bistro 1603 (Mississauga) and Jayne's Gourmet Catering (Toronto).
With over 20 years since he first entered a professional kitchen Chef Tobias decided that it was time to follow his dreams and take the next step by opening his own establishment.
Red Canoe Bistro opened in the summer of 2009 to and succeeded in winning the Burlington Posts "Best New Restaurant of 2009" award.
Red Canoe Bistro operates as three components including serving lunch Monday to Friday and Dinner Monday to Saturday, Private Dining space for over 70 guests and they recently began offsite Event Catering.
Chef Tobias Pohl-Weary refers to his culinary stylings as "Modern Canadian Cuisine". His hyper seasonal menus are changing frequently to best showcase the foods, techniques and ingredients of Canada while he searches far and wide for the best ingredients available.
